Breakfast Recipes With Mango

Here are three breakfast recipes that incorporate mango:

  1. Mango Smoothie Bowl: Ingredients:
  • 1 ripe mango
  • 1 banana
  • 1/2 cup of coconut milk
  • 1/2 cup of Greek yogurt
  • 1/2 cup of ice
  • Toppings: sliced mango, granola, coconut flakes, chia seeds

Instructions:

  1. In a blender, blend together the ripe mango, banana, coconut milk, Greek yogurt, and ice until smooth.
  2. Pour the smoothie into a bowl and add your desired toppings.
  3. Mango Chia Pudding: Ingredients:
  • 1/2 cup of chia seeds
  • 1 1/2 cups of almond milk
  • 1 ripe mango
  • 1/2 teaspoon of vanilla extract
  • Toppings: sliced mango, shredded coconut, honey

Instructions:

  1. In a mixing bowl, whisk together the chia seeds, almond milk, vanilla extract, and diced mango until well combined.
  2. Cover the bowl and refrigerate for at least 2 hours or overnight.
  3. Once the pudding is set, top with sliced mango, shredded coconut, and honey.
  4. Mango Pancakes: Ingredients:
  • 1 ripe mango
  • 1 1/2 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1/4 teaspoon of salt
  • 1/4 cup of sugar
  • 1 cup of milk
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of melted butter
  • Toppings: sliced mango, maple syrup

Instructions:

  1. In a mixing bowl, combine the all-purpose flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined.
  4. Peel and dice the ripe mango and fold it into the pancake batter.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of the pancake batter into the skillet.
  6. Cook the pancake until bubbles form on the surface, then flip and cook until the other side is golden brown.
  7. Repeat with the remaining batter.
  8. Top the pancakes with sliced mango and maple syrup.
